Coffee: This is the way I like it.

Coffee is subjective. Some people like it bitter, some like it light. There are very acidic coffees; but there are also fruity and slightly acidic coffees. I personally prefer the light coffee with less acid. Dark, bitter coffee is like having someone kick you in the face every morning. No bueno. Instead, I want to gradually wake up with a light coffee and only a hint of bitterness. Did I mention creamer? Yes, I need creamer, too. Lots of creamer.

But no matter how you drink your coffee, I think we can all agree that there is something about that fresh smell of coffee in the morning. Do you remember those Folger commercials? “The best part of the waking up, is Folgers in your cup.” Do they still play that song in their commercials? I would sing it for you if I could; it has a catchy tune.

But Folgers had it right, didn’t they? One of the best things about waking up is enjoying that first cup of coffee in the morning. When the house is quiet, I’ll turn on my desk lamp. Then I’ll tip toe to the kitchen to start the Keurig because I don’t want to wake up the kids. I usually drink it while reading my Bible. The morning stillness accompanied with a warm cup of coffee is bliss. Ahhhh. It’s one of my favorite things.

Veranda Blend

The coffee I’ve been loving lately is from Starbucks. It’s called Veranda Blend and it’s perfect for me. The acidity is low. It tastes smooth and silky without the extreme bitterness. The crazy thing is that I rarely go to Starbucks because the coffee is too strong. I’ve often asked them for the lightest coffee they have, and it always ends up kicking me in the face. Maybe I’m a wimp? But I do wonder if they serve this kind in their stores. I will try next time and see what happens.

Creamer

I was at a loss as to how to drink my coffee when I started Whole30. Liking your coffee is important. Am I right? Ok, so it isn’t the end-of-the-world important. But coffee can have a very big impact on my day. Saying good bye to all those sugary creamers was making me dread my mornings.

My coffee became, ahem, boring. Yes, boring. Some of you probably understand. I love creamer- the sweet silky kind that reminds me of melted ice cream. I am the girl who wants a half cup of coffee with about a half cup of creamer. I’ve tried repeatedly to enjoy my coffee black. But it’s no use. My mom says you aren’t an adult until you drink your coffee black. If that’s the case, then I plan on being a kid forever. Give me all the creamer, folks, because that’s the way I like it.

Cashew Milk?

It was difficult to find an option out there without sunflower in it. Sunflower oil and sunflower lecithin trigger flare ups of pain for me. I went searching and I finally found something without sunflower in it that tasted creamy. It’s rich and smooth and reminds me of ice cream. Ha! I first bought it on Amazon, then I found it a little cheaper on Nuts.com. It is plain and simple Elmhurst cashew milk. So far, this is the only brand I have found that I can tolerate without any stomach issues. It is expensive, but for me it’s worth it. As a homeschool mom of four kids, who also works part-time, I don’t want to take the time to make my own cashew milk. Elmhurst does it for me. One of my favorite things about this milk is that it only has two ingredients. Cashews and water-yup, that’s it. That is hard to beat.

The Veranda Blend with the Elmhurst cashew milk is something I look forward to every morning. It’s light and warm and doesn’t smack me in the face like a freight train. Folger’s was mostly right, you guys. The best part of waking up is a nice, warm, light – not so bitter – creamy cup of coffee.
